This very rare honey is extracted in July in the Jura. Its harvest is very different from that of flower honey, as fir tree honey has no nectar. The bees collect the honeydew secreted by the aphids, which they then deposit on the fir trees. Depending on the amount of honeydew deposited on the trees, the harvest can last until autumn.

This honey is used for its antiseptic and anti-inflammatory role. Just like the pine tree from which it comes, it would help to fight against all kinds of respiratory ailments. With lavender and thyme honeys it will be part of your panoply to fight against the arrival of coughs and other winter inconveniences such as sore throats. At a rate of 2 teaspoons morning and evening on toast or in your herbal tea.
